Foodies are going crazy for the latest restaurant to open in Carlisle.

Called Los Locos, the new eatery has a Mexican feel, with a menu stuffed full of tacos, burritos, empanadas and quesadillas.

The Botchergate business has only been open a week, but has already won many fans - including a Mexican diner.

Dani Aitchison is head chef and part owner.

She said: "People have made so many great comments and there wa sa Mexican guy in on Sunday who said it was some of the best Mexican food he has had and he thought the chef was Mexican!"

Originally she was only brought in to help the owners draw up a menu and find a kitchen team, but the business rekindled her interest in cooking.

Dani, 26, took up cheffing during a four year stint in Australia.

She worked in a Mexican restaurant there and picked up many recipes.

When she returned to her home town of

Carlisle, she was appointed head chef at The Belted gourmet burger restaurant which was in in Carlisle's former crown post office in Warwick Road, before moving to The Skullery in the Bronx Sports Bar on Botchergate.

She said: "When Panchos closed, there was no Mexican restaurant in the city, so I thought I would do it.

"But I was on my own and it was a lot of work. I closed that and had a break from cheffing.

"As the days went by here, I fell more and more in love with cooking, so here I am. I have got my passion for food back."

All the fillings for the burritos, quesadillas, fajitas, enchiladas, empanadas and taco bowls are made in-house.

As well as the usual Mexican dishes, Dani also has a weekly special - such as an all-day Mexican breakfast which has spicy beans, chorizo sausage, bacon and a poached egg served in a taco bowl.

Los Locos has taken over the space that was once the Spanish restaurant Lorca, though there is no connection between the two.

Dani says long-term plans include a takeaway service and introducing more dishes to the menu.

She added: "I fell out of love with food, but now I've fallen back in again.

"I love researching Mexican food and ingredients and doing different things, making dishes your own and creating stuff - and people seem to like it."
