History: The Green Room launched on June 1, 2017 as part of a £3m transformation of Rosehill, previewed by HRH The Prince of Wales.

Style of food: Classic British food prepared with imagination and quality ingredients, sourced wherever possible from the wealth of local suppliers.

Menu sample: Starters could feature steak tartare, Bloody Mary, quail egg, sourdough, garnishes (£12); seared scallops, cauliflower purée, golden raisins, crispy capers (£13); Blue Whinnow panna cotta, sticky walnuts, fig, honey, mustard (£8); devilled kidneys, black velvet sauce, truffle, wild mushroom (£9).

Mains include breast of guinea fowl, chicory, sour cherries, pistachio, squash (£19); seared venison, red cabbage, smoked potato purée, pickled fennel, pine nuts (£22); cauliflower steak, crispy cauliflower, herb cous cous, hazelnut pesto (£15); fillet of cod, white bean purée, brown shrimp, sea vegetables (£19).

Desserts feature toffee vodka espresso coffee creme brûlée, chocolate coffee beans, cappuccino ice cream (£7); baked vanilla cheesecake, warm whisky, raspberries (£7); passion fruit sorbet baked Alaska (£8); roasted peach Charlotte, coconut, toasted almond ice cream (£7).

In their own words: The Green Room and the provision of food and drink at Rosehill aims to create a centre of excellence in hospitality.

In association with the catering school at Lakes College West Cumbria, we provide apprenticeships, work experience and employment for students and graduates, developing confidence, presentation and skills alongside creative and experienced professionals.

Our “restaurant with a view” which overlooks the Solway Firth offers a range of dining options, from à la carte to afternoon tea, lighter bites, seasonal specials and more.

We complement Rosehill’s programme, with theatre-goers increasingly coming for “supper and a show”.
