Nestled in the unspoilt Borrowdale Valley, the Leathes Head Hotel is keen to build on its growing foodie reputation through embracing a new approach to its wine cellar.

New general manager Leigh O’Donoghue is passionate about wine and plans to work closely with prestigious supplier Corney & Barrow over the coming months to develop a top quality wine list that will surprise and delight guests.

At more than 230 years old, Corney & Barrow is one of the longest established independent wine merchants in the UK and has more than 1,500 wines in tis portfolio. It deals with small winemakers on an exclusive supply basis.

Leigh said: “I believe that having a distinctive wine list is important for Leathes Head Hotel to match the high-quality food offer from Noel Breaks our head chef.

"When I go out for dinner I like the ideas of being able to journey round the world with a wine list rather than being dictated in one direction.

"It’s having that freedom of choice from a selection of superior wines that will really appeal to wine aficionados, but equally we are there to help guide diners and give recommendations on parings that will complement the food they have chosen.

"We aim to deliver a relaxed contemporary dining experience that makes people want to come back time and time again.

“Last year we ran a small intimate evening dedicated to wines from a specific producer, which was hosted by wine expert Irene Gore, from Vignamaggio in Tuscany and featured a one-off menu created to pair beautifully with the wines. We will be looking to build on the success of this evening by hosting similar events in the summer and autumn.”

To complement his passion for wines and alongside his role as general manager Leigh has just started studying for his WSET Award in Wines and Spirits at Kendal College. The qualification is recognised around the world and provides a solid grounding in wine tasting, focusing on the key grape varieties and regions of the world.

It is the first step towards further training to become a fully certified sommelier which takes several years. The highest ranks of sommelier are a rare and prestigious group.

The restaurant at Leathes Head Hotel holds 2 AA Rosettes and received the accolade of being added to the Michelin Guide this year. Also known for its elegant charm and home from home comforts the hotel is popular with both walkers and couples taking a romantic break.
